It’s been a busy few days on Delmar and marshmallow madness is definitely in full gear. This year I wanted to try some new flavors and the Rock Maple Liqueur was top on the list. Given as a gift from a fellow Delmartian, this liqueur is produced and made by her family in New England. Inspired from the personal records of John Philip Howard (1824-1904), the recipe is now preserved by her family for all to enjoy. The name Rock Maple was chosen from the Rock Maple tree, one of two of the only maple trees that produce sweet sap and tapped to make maple syrup. More than 40% of this delicious bottle contains 100% pure grade “A” maple syrup and is 50 proof.
While making this batch I was a little light with the hand and use of the liqueur but I think next time I need to go for it. The marshmallow turned out sweet, light and perfect. My husband was so excited about this batch, I now have Bourbon next on the list.
